What’s new in Old San Juan is Numen, a latin word that describes the presence that inhabits a place. In the kitchen, it lives in the ingredient. At the bar, in the ritual. In hospitality, in the precise moment. It is that invisible element that transforms a space into an experience.
Numen is the new culinary concept by Chef Juan José Cuevas, whose cuisine is guided by seasonality, sourcing, and precision. Juan José has been named Chef de l’Avenir by the International Academy of Gastronomy and trained in kitchens such as Blue Hill, Noma, and The French Laundry. In Puerto Rico, he led Restaurant 1919 at the Vanderbilt Hotel for thirteen years.
We visited Numen to experience and review the restaurant, beginning with the Coriander Crusted Tuna, which combines fresh tuna, briefly seared, with roasted pepper, Guacabo sweet pepper (PR), pickled elements, touches of lemon, and Italian Taggiasca olive oil. It was delicious. I highly recommend it.
We continued with the Local Calabaza and Organic Carrot Salad, featuring avocado, yogurt, and pistachios, finished with dukkah, nasturtium, and Elis salad greens. A distinctive salad, full of flavors and textures that impress the palate.
Next came the catch of the day, Mahi-Mahi Fillet, seared and served with warm Brussels sprouts, a Jerez vinegar sauce, pistachios, pancetta, and a soy-lime emulsion. The fish was fresh and cooked to perfection.
We then had the Berkshire Pork Chop, prepared with a sauce of roasted tomatoes, dates, pistachios, piquillo peppers, capers, currants, and apricots, served over polenta and finished with a mustard-curry jus. I found it spectacular.
To finish, we had the dessert, Chocolate Textures. I enjoyed it very much, but, of course, I am a chocolate fanatic. It was delicious. Definitely worth breaking the diet for.
The wine that accompanied our meal was a Benjamin Leroux Meursault Les Vireuils 2022, France, from my personal cellar. A white Burgundy with a fine, elegant bouquet, green apple notes on the nose, and creamy flavors of peach and pear, finishing with mineral and saline notes that provided a perfect pairing for all the dishes.
There is a corkage policy, and the wine list is appropriate. The service is very friendly and efficient. I loved the atmosphere and the décor. I highly recommend this place.
