Grasa es cocina contemporánea con identidad propia, en el corazón del Viejo San Juan, donde se propone una mirada contemporánea al concepto de bistró: un espacio donde la cocina, la coctelería y la cultura se encuentran sin necesidad de demasiados adornos. Su filosofía cabe en una frase que funciona casi como declaración de principios: “Sin pretensión. Con intención.”

La propuesta gastronómica se mueve entre el producto, la técnica y una sensibilidad claramente caribeña. Hay platos que privilegian los sabores reconocibles y otros que juegan con contrastes, texturas y presentaciones más elaboradas, pero siempre con la intención de mantener la comida en el centro de la experiencia.

Los visitamos y comenzamos con el Tartar de lomo de atún, montado sobre una tostada de maíz azul, con crema de anacardo y salsa macha verde. Simplemente delicioso.

Seguimos con el Pescado del día, dorado a la plancha, acompañado de almejas, ajillo verde, aceite de albahaca y arroz con coco. El pescado llega en su punto perfecto y el aceite verde funciona como hilo conductor del plato. Las almejas aportan ese carácter marino que completa una composición sencilla en apariencia, pero cuidadosamente construida.

El Pulpo a la bourguignon, con mantequilla de perejil, ajo y licor de anís, terminado con migas de pan crujientes, es un plato intenso, aromático y lleno de textura. Para mí, fue una verdadera delicia por la combinación de sabores tan diferentes. Se los recomiendo.

El vino que acompañó los platos fue El Castro de Valtuille Godello 2024, DO Bierzo, España, de mi cava personal. Un blanco fresco y balsámico, con aromas de flores amarillas, polen y cera de abejas. En boca es vivo y sedoso, con una acidez vibrante y un sutil toque salino. Un perfecto maridaje.

El servicio es muy atento y eficiente, y el ambiente y la decoración complementan bien la propuesta. Me gustó mucho el lugar y lo recomiendo.  Están ubicados en el #110 de la Calle San Sebastián, Viejo San Juan, PR.  Tel. 787-702-9908

Grasa is a contemporary restaurant with a distinct identity, located in the heart of Old San Juan. It offers a modern take on the bistro concept—a space where cuisine, cocktails, and culture come together without the need for excessive embellishment. Its philosophy can be summed up in a phrase that serves almost as a statement of principles: “Without pretension. With intention.”

The culinary approach moves between quality ingredients, technique, and a distinctly Caribbean sensibility. Some dishes highlight familiar flavors, while others explore contrasts, textures, and more elaborate presentations, always with the intention of keeping the food at the center of the experience.

We visited and began with the Tuna Loin Tartare, served on a blue corn tostada with cashew cream and green macha sauce. Simply delicious.

We followed with the Pan-Seared Fish of the Day, accompanied by clams, green garlic sauce, basil oil, and coconut rice. The fish was cooked to perfection, while the green oil served as the connecting element throughout the dish. The clams added a distinctly briny character, completing a dish that appears simple at first glance but is carefully composed.

The Octopus Bourguignon, prepared with parsley butter, garlic, and anise liqueur, and finished with crispy breadcrumbs, is an intense, aromatic dish full of texture. For me, it was a true delight, thanks to its combination of distinctive and unexpected flavors. Highly recommended.

The wine accompanying our meal was El Castro de Valtuille Godello 2024, DO Bierzo, Spain, from my personal cellar. A fresh, balsamic white wine with aromas of yellow flowers, pollen, and beeswax. On the palate, it is lively and silky, with vibrant acidity and a subtle saline note. A perfect pairing.

The service is attentive and efficient, while the atmosphere and décor complement the overall concept beautifully. I truly enjoyed the experience and highly recommend the restaurant.
