DANTE debuta en San Juan: un nuevo destino de gastronomía italiana en el rooftop de O:LV FIFTY FIVE
Desde el rooftop del hotel boutique O:LV FIFTY FIVE con vistas a la Laguna del Condado, DANTE presenta una experiencia de gastronomía italiana contemporánea y mixología inspirada en la Divina Comedia.
DANTE, el nuevo restaurante italiano contemporáneo en el rooftop de O:LV FIFTY FIVE, debuta como una propuesta destacada en la escena gastronómica local. Con vistas a la Laguna del Condado, ofrece una experiencia que combina cocina italiana moderna, una cuidada selección de vinos y mixología conceptual bajo la dirección del Chef Ejecutivo Jason Neroni.
El concepto pertenece a los copropietarios Robert Weakley y Abelardo Ruiz, de Eat Me Hospitality Group, responsables de restaurantes como Bottles Guaynabo, Bottles Dorado y DRGN. Weakley también fundó el Puerto Rico Wine & Food Festival en 2025, contribuyendo al posicionamiento culinario de la Isla.

“Nuestro objetivo fue honrar la tradición italiana desde una perspectiva actual”, señaló el chef Jason Neroni, integrando influencias globales en una propuesta personal y conectada con el entorno.
La mixología se inspira en la Divina Comedia, con cócteles organizados en tres etapas: Inferno, con perfiles intensos; Purgatorio, equilibrado y herbal; y Paradiso, fresco y ligero. Esta oferta se complementa con una selección internacional de vinos del Viejo y Nuevo Mundo.
El diseño del espacio combina sofisticación y arte, con mobiliario personalizado, piedra italiana y una barra de ónix blanco, creando una atmósfera que evoluciona del día a la noche.

DANTE, the new contemporary Italian restaurant located on the rooftop of O:LV FIFTY FIVE, debuts as a standout addition to the local culinary scene. With views of the Condado Lagoon, it offers an experience that blends modern Italian cuisine, a carefully curated wine selection, and conceptual mixology under the direction of Executive Chef Jason Neroni.
The concept is led by co-owners Robert Weakley and Abelardo Ruiz of Eat Me Hospitality Group, the team behind Bottles Guaynabo, Bottles Dorado, and DRGN. Weakley also founded the Puerto Rico Wine & Food Festival in 2025, contributing to the island’s growing culinary recognition.
DANTE presents an expression of Italian gastronomy that balances flavor and emotion. The menu offers a contemporary take on Italian cuisine rooted in classic techniques, featuring handmade pastas and dishes such as Carbonara, Rigatoni alla Vodka, Sweet Corn Agnolotti, Sicilian-style branzino, and dry-aged A5 Wagyu.
“Our goal was to honor Italian tradition from a modern perspective,” said Chef Jason Neroni, whose globally influenced approach creates a menu that feels both personal and connected to its surroundings.
The mixology program draws inspiration from the Divine Comedy, with cocktails organized into three stages: Inferno, with bold and intense profiles; Purgatorio, balanced and herbal; and Paradiso, fresh and light. This is complemented by an international wine selection from both the Old and New Worlds.
The design of the space blends sophistication and artistry, featuring custom furnishings, Italian stone, and a white onyx bar, creating an atmosphere that evolves seamlessly from day to night.
