Nobel Restaurant, Niagara-on-the-Lake, Canadá

En Niagara-on-the-Lake, Noble Restaurant fusiona la cocina de temporada de la región vinícola con la tradición francesa, en un entorno elegante, con vistas panorámicas a Simcoe Park y un servicio de excelencia. Su chef, Jean-Paul (JP) Comte, asumió en 2024 la dirección culinaria de Noble Restaurant, en el hotel Prince of Wales, con una propuesta de alta cocina basada en ingredientes frescos y de proximidad.

Los visitamos para reseñarlos y comenzamos con la Velouté de Espárragos, una crema suave de espárragos, queso cheddar artesanal de Niagara, espárragos encurtidos y crème fraîche al limón, muy delicada y balanceada en sabor y textura.

Después pasamos al Grand Banks Halibut, un filete de fletán (rodaballo) acompañado de crema de puerros, espárragos y salsa beurre blanc con caviar de salmón. La piel del pescado estaba tostada, pero el interior se mantenía jugoso. Muy sabroso y fresco el pescado; me gustó.

Lo siguiente fue el Pato Confitado, sobre legumbres y setas shimeji salteadas y coronado con brotes tiernos. Estuvo de maravilla, muy sabroso.

De postre, el Blackberry & Lavender Crème Brûlée, delicioso; vale la pena.

El vino que nos acompañó fue Kew Marsanne Viognier 2023, Beamsville Bench, Niagara, Canadá, un blanco seco que ofrece una textura aterciopelada y una complejidad de sabores en capas, muy apropiado para maridar todos los platos que degustamos.

La carta de vinos es muy buena, el servicio es de primera y el ambiente y la decoración son muy elegantes. Están ubicados en el Hotel Prince of Wales, en el #6 Picton St. Tel. 1-888-669-5566.

Les recomiendo visitar Niagara-on-the-Lake, un pintoresco y simpático pueblito ubicado en la confluencia del río Niagara con el lago Ontario, en Canadá. Es muy lindo y está rodeado de viñedos que vale la pena visitar.

In Niagara-on-the-Lake, Noble Restaurant blends the seasonal cuisine of the wine region with French tradition, in an elegant setting featuring panoramic views of Simcoe Park and outstanding service. Chef Jean-Paul (JP) Comte took over the culinary direction of Noble Restaurant at the Prince of Wales Hotel in 2024, offering fine dining centered on fresh, locally sourced ingredients.

We visited the restaurant for a review and began with the Asparagus Velouté, a delicate asparagus cream with artisanal Niagara cheddar, pickled asparagus, and lemon crème fraîche. It was delicate and beautifully balanced in both flavor and texture.

Next, we had the Grand Banks Halibut, a halibut fillet served with leek cream, asparagus, and beurre blanc sauce with salmon roe. The skin was beautifully crisp while the inside remained juicy. The fish was fresh and very flavorful; I enjoyed it.

Next came the Confit Duck, served over legumes and sautéed shimeji mushrooms and topped with tender microgreens. It was wonderful—very flavorful.

For dessert, we had the Blackberry & Lavender Crème Brûlée, which was delicious and definitely worth trying.

The wine accompanying our meal was Kew Marsanne Viognier 2023, Beamsville Bench, Niagara, Canada, a dry white wine with a velvety texture and layered complexity, making it a very appropriate pairing for all the dishes we tasted.

I highly recommend visiting Niagara-on-the-Lake, a charming and picturesque little town located at the confluence of the Niagara River and Lake Ontario in Canada. It is beautiful and surrounded by vineyards that are well worth visiting.
